Mini Vegan Golden Pumpkin Pies

CHRISTMAS NEVER TASTED SO GOOD! Vegan friendly, sugar, nut, dairy and gluten free, but so full of flavour. WE LOVE PUMPKIN for its high quantity of gut healthy fibre and its capacity to help prevent so many conditions such as heart disease, cancer and many other degenerative diseases.

 

This tasty dessert will provide you, your family and loved ones with a healthy source of vitamin C, riboflavin, potassium, copper, and manganese. Plus vitamin E (alpha tocopherol), thiamin, niacin, vitamin B6, folate, iron, magnesium, and phosphorus. Its bright golden colour represent the beneficial phytonutrient carotene that is present that converts to vitamin A in the body which is great for destroying harmful antioxidants. So get baking this Christmas with this delicious golden treat!

Ingredients

Base:

1 cup gluten free self raising flour.

¼ cup of coconut flour.

2 tbs rice malt syrup.½ cup of shredded coconut.

¼ cup of coconut oil.¼ cup of water.

Pinch of pink Himalayan salt.

Filling:

1 ½ cup of roasted pumpkin.

⅓ cup of coconut oil.2 tbs of rice malt syrup.

⅓ cup of coconut milk.

1 heaped tsp of Golden Gut Turmeric Spice Blend.

½ tsp of cinnamon.

Pinch of Himalayan salt.

 

 

Method

Base:

1. Place all ingredients into a mixing bowl and combine well using a wooden spoon.

2. Then divide mixture into ten cupcake cases (place cupcake cases into a muffin pan to help support shape). Press mixture down to form a base.

3. Bake in the oven at 180 degrees for 10 minutes. Remove and allow to cool while you prepare the filling.

 

Filling:

1. Place all ingredients into a blender (we used our Nutri-Bullet but any blender or food processor is fine).

2. Blend until all ingredients are well combined and the mixture is a smooth consistency.

3. Fill on top of bases evenly, then place in the fridge to set for 1 hour.

Golden Gut Nut Bars

Golden Gut Nut Bars

You won’t go nuts making this easy and quick recipe that is great for you both nutritionally and mentally! Packed with so much goodness, nuts and seeds are full of healthy fats and are a great source of plant protein. Cacao butter stands alone as a superfood for its high antioxidant properties, its ability to improve your mood as it contains phenylethylamine which is responsible for our state of mood and pleasure and the same feelings you get when you are in love. It also contains, magnesium, manganese, zinc, calcium and potassium. Lastly, we love buckwheat because it can lower inflammation in the gastrointestinal tract and can also lower cholesterol levels, plus it has a beautiful nutty taste.

 

Ingredients

½ cup of almonds

½ cup of cashews

¼ cup of pepitas

¼ cup of sunflower seeds

½ cup of cacao butter

1 tbs of cold pressed unrefined coconut oil

2 tbs Slippery Elm

2 tbs of Rice Malt Syrup

2 tbs of buckwheat flour

1 Tbs of Golden Gut Turmeric Spice Blend (GGTSB)

¼ tsp of Pink Himalayan Rock Salt

(Optional 1 tsp of Stevia for added sugar free sweetness)

Utensils

1 medium size chopping board

1 sharp knife

1 loaf tin (or any type of baking dish/tupperware container will do

Baking paper

Assorted measuring spoons

 

Method

1. On a chopping board using a sharp knife, roughly chop your nuts and seeds to a chunky consistency. Place in a large bowl.

2. Warm cacao butter and coconut oil to a complete liquid state using a microwave or a saucepan on a stove top. Then pour over your chopped nuts and seeds in the bowl.

3. Add Golden Gut, Slippery Elm, Rice Malt Syrup, buckwheat flour and pink Himalayan Rock Salt. Stir until well combined.

4. Pour entire mixture into a loaf tin that has been lined with baking paper. Press down firmly and evenly.

5. Place tin in the fridge for half an hour to set.

6. Remove tin from the fridge. Remove the set mixture from the tin and the baking paper.

7. On a chopping board using a sharp knife, slice into bars or squares.

Detoxifying Black & Gold Bread

Don’t be fooled by the colour because this bread truly is the bomb……….a health bomb that is! There’s so much goodness going on in each slice it’s hard to know where to start, but here goes! The coconut flour is full of lauric acid possessing antiviral, anti-fungal and antimicrobial effect within the body. Buckwheat (is not a wheat at all) is a good source of fibre and has an anti-inflammatory effect on the digestive system for improved digestion. Flax-seeds are a good source of omega-3 essential fatty acids which is great for heart health. Activated Coconut Charcoal can draw out unwanted toxins from your body as it passes through your digestive tract, relieves digestive issues such as gas and bloating plus some studies have shown it to have anti-aging effects at a cellular level. Lastly our Golden Gut…..well you know all about that, don’t you! Enjoy!!

 

Ingredients

½ cup of coconut flour

½ cup of buckwheat flour

2 tsp of Golden Gut Turmeric Spice Blend (GGTSB)

2 tsp of Activated Coconut Charcoal

1tsp of aluminum-free baking powder (available at your local bulk/health food store)

3 organic free-range eggs

3 flaxseed meal eggs

½ cup organic coconut milk (extract creamy part from the water - discard the water)

2 ½ tbsp melted cold pressed unrefined coconut oil

½ tsp of Pink Himalayan salt

2 mixing bowls

Spatula

Wooden spoons

Method

1. Preheat your oven to 175 degrees celcius (fan forced). Line a loaf tin (including the sides) with baking paper.

 

2. In one bowl combine coconut flour, buckwheat flour, baking powder and Pink Himalayan salt and mix together well. This is your dry mix.

 

3. In a second bowl combine the eggs, flaxseed eggs, coconut milk and coconut oil and mix together well. This is your wet mix.

Now pour your wet mix into your dry mix and mix until all ingredients have combined and created a wet dough.

 

4. Separate the dough into equal amounts into two bowls.

 

5. In one bowl fold the Activated Coconut Charcoal into the dough until the dough turns black. In the other bowl, fold GGTSB into the dough until the dough turns golden. Then transfer the golden dough into the bowl with the black dough and mix together so that the two doughs combine but don’t blend completely (you should still be able to see a distinct separation in the two colours.

 

6. Then transfer the combined doughs to the lined loaf tin and press gently and evenly into the shape of the tin.

 

7. Bake for 25-30 minutes or until the loaf rises and is firm to the tough in the centre of the tin (should have a slight spring-back).

 

8. Once baked, remove the bread from the loaf tin and allow to cool on a wire cooling rack. Once cool, slice and serve with your favourite toppings such as golden turmeric syrup (recipe to be posted soon) or smashed avocado and nutritional yeast are our pick, but basically anything you like!

Golden Coconut Crackles

Ingredients

1/2 cup cacao butter

2 tbs coconut oil

2 tbs rice malt syrup

1 packet stevia (optional)

1 tsp Golden Gut Turmeric Spice Blend (GGTSB)

Pinch pink Himalayan salt

1 cup quinoa puffs

1 cup dessicated coconut

1/3 cup Sunflower seeds or crushed cashews

 Method

1. Melt cacao butter & coconut oil together, then in a bowl mix in the rice malt syrup.

 

2. Then add GGTSB, pink Himalayan salt. quinoa puffs, desiccated coconut and sunflower seeds or crushed cashews. Combine well.

 

3. Spoon into mini cupcakes cases and freeze for 30 min or until set.

 

4. Store in fridge in airtight container.

Great as snacks for the whole family and party food!
